Tomato, Caper and Boccancini Salad 

Wow, it’s been a while since my last post! I apologize, let’s just blame it on summer fun 😁 Speaking of which, I find that the summer months are the time when I crave fresh, seasonal ingredients. Especially deliciously sweet and crunchy cherry tomatoes and bright red onions. These two ingredients are the star of today’s dish. An extremely light and tasty salad that could work as a side dish or even a meal. The addition of capers into this fairly common salad adds a much needed salty and briny component which negates the need for additional salt. The bocconcini is mild and soaks up the flavours from the dressing.

A simple avocado oil and balsamic drizzle dresses this salad with just the right amount of tanginess to balance out the sweetness of the tomatoes and to cut through the richness of the mozzarella. Yum! As I am eating this salad, I am already contemplating bowl #2. Perhaps for a meal, chicken could also be added. Hmmm… Maybe next time!
