Pistachio Crusted Rack of Lamb with a Yogurt Mint Dipping Sauce



  • Rack of lamb
  • Salt & pepper
  • Avocado oil
  • Whole grain mustard
  • Shelled pistachios
  • Garlic clove
  • Almond flour
  • Mint leaves
  • Greek yogurt
  • Lemon juice
  • Dill


  • Preheat oven to 400
  • Cut up racks and trim fat as necessary
  • Season with salt and pepper and sear on a hot oiled pan
  • Place racks on foil lined baking sheet and rub with mustard
  • In a food processor, combine the pistachios, garlic and almond flour add finely chopped mint, lemon juice and oil
  • Pack mix onto lamb and bake for 25 minutes
  • Mix yogurt, mint, lemon juice, garlic, salt & pepper and dill to create the dipping sauce
  • Let lamb rest for ten minutes and serve with dipping sauce. Enjoy!
