Olive oil (I used cilantro flavored)
Pour olive oil into a heated pan. Add the tomatoes, onion and mushrooms until the tomatoes blister. Add the garlic.
Add the carrot (I used a carrot peeler to create the noodles) and stir to combine.
Take the pasta out of pan and put onto a plate and turn down the heat.
Mix goat cheese and milk in the same pan while scraping up all the bits and pieces left behind.
Once the sauce is a silky texture, re-add the pasta and stir.
