Chipotle Chops with a Tomatillo and Corn Salsa

Do you ever feel like eating a specific ingredient and then end up basing your entire dish around it? That’s what happened to me tonight as I was gazing at the flourishing cilantro in my herb garden. It had been a while since I had made a dish with cilantro and I thought I would seize tonight as the opportunity to go cilantro crazy!

You already know that by using cilantro, this dish will take on some Mexican flavours. I had already taken out some porkchops so I thought a Mexican influenced marinade would do the trick! I had also purchased some tomatillos at the grocery store and I figured a fresh, bright and citrusy salsa would help to cool down the palette after the fiery marinade. In this marinade is predominately chipotle peppers, along with the complimentary flavours of lime, garlic and tomato paste to bind it all together.

This is by no means a quick and easy recipe. So give yourself lots of time before trying this Mexican gourmet meal.
