Oh fresh herbs, how I love you! Especially when most of the hard work has already been done. Such is the case with my mint that I have growing out on my back deck. My mom and dad have generously given me two stalks, about three feet tall, which I have transplanted into a planter. Now the tough part is figuring out recipes so I can use it up because it grows super fast! I decided to freeze some in ice cube trays so that I could make a nice refreshing glass of water with a little flavour but I wanted to do more than just a drink or sweet preparation.
I opened up the question to my Instagram and Facebook friends and I got some good ideas. One of my favourites was a mint, watermelon and feta salad, yum! It sounded so tasty and fresh, I had to try to right away. I whipped up a super simple lemon vinaigrette which complemented the salty-sweet flavours perfectly.
Does anyone else have any great mint ideas for me to test out?
