Herb-crusted Eye of Round Roast




  • 3 pd Roast
  • 6 cloves garlic, slivered
  • Thyme
  • Basil
  • Worchester sauce
  • Dijon
  • Veg Oil
  • Salt and Pepper



  • Preheat oven to 500.
  • Mix oil, herbs and Dijon together.
  • Slit roast and add sliced cloves.
  • Rub Worchester all over roast, then salt and pepper. Then add rub.
  • Place roast in dish, do not add water and do not cover
  • Throw in oven and decrease heat to 475 for 21 minutes.  Turn off the oven and let sit for 2 ½ hours. DO NOT OPEN the oven until the time is up, you do not want the heat to escape.
