Whole grain mustard

Preheat oven to 350.
In a cast-iron skilled, sauté bacon pieces until cooked. Add the mushrooms and onions and sauté together until the onions are translucent. Add the spinach and cook until wilted.
In a large bowl, whisk together the eggs, spices and mustard and pour into the skillet.
Allow to cook on the stove-top for about 5 minutes until the edges are cooked then transfer into oven.
Bake for 30 minutes and enjoy!
