Stuffed Peppers

2012 12 21 Stuffed peppers



  • Italian hot sausage and/or ground beef
  • Bell peppers, color of choice
  • Cauliflower grated into rice consistency
  • Tomato paste
  • Onions
  • Garlic
  • Basil
  • Oregano
  • Thyme
  • Salt and pepper



  • Preheat oven to 350
  • Cook sausage, beef, onion and garlic over medium heat until browned.
  • Stir in tomato paste and spices
  • Simmer covered for 30 minutes until ingredients are fully combined.
  • Add riced Cauliflower and stir to combine
  • Stuff peppers with filling
  • Place peppers on pan standing up
  • Top each pepper with extra can of sauce and a teaspoon of Italian Seasoning.
  • Put a bit of hot water on the bottom of the baking dish
  • Bake for approximately one hour
