Chicken Fried Rice Paleo Style!



Cooked chicken


Diced carrots

2 Eggs



Sesame oil

Soy sauce (low sodium)

Fish sauce



In a large skillet, heat up sesame oil.

Add the onions, carrots and garlic and stir for approximately 5 minutes.

Food process the cauliflower until it takes on a rice consistency and add to skillet.

Pour in soy sauce, chicken and peas and and stir until combined.

Add the fish sauce and allow to cook for about 5 more minutes, stirring every once and a while.

Whisk two eggs and add into skillet, stirring so that they scramble.

Serve and enjoy!
