Yet again, it is well into the afternoon and I have yet to eat anything. At least I got my workout in which, on a Sunday, is quite a feat I must say. They say fasting is good for you anyways right? So I’m starving and I see some hard-boiled eggs already prepped in the fridge; thank god for that!! I make a quick egg salad while I’m frying up some delicious maple bacon. Feeling like I need to make it more nutritious, I add a couple leaves of arugula which also adds a nice peppery pop.
This whole dish took less than ten minutes and definitely hit the spot! What are some of your lunch quick-fixes?
