Oh boy, if only you knew how I ate these last couple of days, you would be very disappointed in your Paleo Princess. Let’s just say that I will not be having any cheat meals for about a month! This indulging left me to feel extremely bloated and lethargic, so I decided that a very light salad would be the perfect antidote.
I love the freshness of mandarin oranges so I thought an Asian inspired chicken salad would be perfect. Accompanied with a very light and citrusy sesame dressing, this was the perfect meal to get myself back on track! The addition of sesame seeds, edamame and some crispy seaweed really set off the flavours of soy and sesame for a completely satisfying paleo meal.
