Lemon Coconut Tartlets

I have been craving a lemony dessert for a long time now. Especially since I can feel spring just around the corner (never mind this morning’s snow storm…) I think its a combination of the bright sunny colour and the fresh zesty flavour that make it so springy. Anyhow, there is snow on the ground, its almost April and I’m fed up with  winter weather! So if I bake something super-springy, maybe it will help to welcome in my favourite season! Heres to wishful thinking…

Using a pretty standard Paleo crust recipe helped me to achieve a nice crunchy bottom and sides for these tartlets. The filling is super-bright has a predominantly lemon flavour with a nice tinge of the honey and coconut. There could be many variations on this recipe but I really wanted the lemon to stand out.
