Oh how I love a good slaw every now and again. I must confess though, usually I just buy the prepackaged cabbage and carrot mix and a jar of coleslaw dressing but today I was feeling ambitious and decided that I would make it from scratch. I cant believe how easy it was, never again will I waste money on the pre-cut and pre-made fuss when mine tasted 1,000 times better.
I always found that the coleslaw dressings never had the right amount of kick to it. Don’t get me wrong, I love a nice and creamy slaw but it also needs some acidity to excite these tastebuds! I get that acidity with my all-time favourite- red wine vinegar. It adds just the right amount of tang to any dressing and was perfectly mellowed out with the mayo in this one. The best part? This coleslaw is entirely Paleo; nutritious AND delicious! 🙂
