Watch out, because this is not your mother’s cream of mushroom soup! For starters, this is a Paleo version and best of all, this soup packs a punch! The addition of jalapeños ensures a healthy kick which will wake up your tastebuds. There are also copious amounts of garlic and onion added so perhaps this wouldn’t be the most ideal date meal 😛 Fortunately (or unfortunately) for me, the Vegetable Hater is out of town for dinner tonight. That is the main reason why I decided to make this soup because I know that he would not be a fan. Even though it is the most delicious soup that I have tasted in a while, he is just so picky!I guess you can look at it as good practice for when my baby starts eating real food. But I am hoping to start her off tasting all different kinds of food to avoid that pickiness.
The creaminess of this soup is achieved with one of my favourite soup go-to’s: coconut milk. I used to find it so aggravating when using coconut milk because a dish never requires a whole can and even after placing the extra in the fridge with good intentions, it would always go bad. BUT I have discovered this new trick; I place the extra coconut milk in an ice cube tray and any time a recipe requires it, I just pop out a cube or two. Ingenious right? Sometimes I surprise myself.
