So, after finding out that quinoa was Paleo, I was on a quest to find out which other seeds I was missing in my life. Lo and behold, I found the chia seed! I was so surprised to find another hidden gem that not only tastes good AND is Paleo but is also packed with super nutrients!
While researching this seed and how to incorporate it into my diet, I came across numerous recipes for chia seed pudding. I am always on the lookout for Paleo dessert options since I have somewhat of a sweet tooth so I was very happy! 😁 Tonight I had a big-time chocolate craving so I decided to play around and see what I could concoct. Unfortunately, the pudding has to set overnight so I had to wait until I woke up to test it out. But it made for a sinfully delicious breakfast that was actually good for me, so it was all good in the end. Can’t wait to see what other recipes I can come up with!
