Zucchini Primavera

So I FINALLY bought a zucchini spiralizer today and I must say, what an amazing invention! Zucchini noodles may now replace my old spaghetti replacement standby, spaghetti squash. If you purchase a good quality one the it is super simple to use, just do not buy the handheld one. I made that mistake and ended up throwing it out and wasting a zucchini. Actually, I lie, I used the mangled zucchini by making a zucchini bread lol.

Anyways, back to my lunch today. I was really craving this pasta dish that I used to get at my favourite Italian restaurant. It was a delicious linguini primavera with fresh, crisp vegetables tossed in a very olive oil sauce. All I had to do to paleoize this dish, was substitute the linguini for zucchini. Unbelievably, you barely notice the difference! I would actually prefer this over a pasta dish because it leaves you satisfied without the bloat and tiredness that comes with a pasta dish. I used minimal ingredients and a nice flavoured cilantro and roasted onion olive oil to meld all of the flavours perfectly. Finish it off with a squeeze of fresh lemon for even more brightness and you’re ready to be in zucchini noodle heaven! Enjoy!
