Want an easy, low-maintenance meal that can feed a small crowd? Try this delicious pulled pork recipe which is slow-cooked all day for optimal flavour and tenderness. Today we were having my parents over for a Fathers Day filled with fishing for the men and some lounging for the women 🙂 Since I didn’t want to be wasting quality time preparing a meal while they were here, I instead opted for a slow cooker meal that could be pulled together quickly once dinner time came.
The most complicated part of this recipe is the sauce which can be tweaked to serve your tastes. I always love a good chipotle flavour so I make sure to keep them on stock at all times. They add a nice punch to the sauce and you can even kick it up a notch by adding jalenenos or another type of pepper. I like to add a creamy and fresh tasting sauce to contrast with the rich pork. Today, I had asked Vegetable Hater to pick me up some cilantro for the crema but when he came home, he had grabbed mint instead! I was going to completely nix the sauce when my mom mentioned that the mint would go nicely with the lime crema I was planning. We tested it out and sure enough, it was delicious! Thanks mom!
With one pork roast, I was able to feed four people with some leftovers. Everyone else enjoyed their pulled pork on soft white buns but I was quite happy with my lettuce cups! This recipe can even be doubled as there is enough room in the slow cooker for another cubed roast… Maybe next party!
