Brace yourselves for an onslaught of pork-centric dishes. As mentioned in yesterday’s post, we have just received our entire pig back from the butcher and it has filled our freezer. Naturally, one of the first dishes that I wanted to have was pulled pork because it’s one of my favourites! Out of all the times I have prepared pulled pork, this is hands down the most tender and flavourful I have ever had. As per usual, I utilized the slow cooker and cooked for about 6 hours with a mix of wet and dry ingredients. I also love the idea of something acidic with the rich pork so I decided to do a quick pickle of red onions. Such a great contrasting flavour and it also added that bit of requisite crunch. Of course I had to forego the soft buttered bun but this romaine heart was a welcome replacement. A side is not even necessary with this dish as you already have the vegetable and protein covered and if you’re anything like me, you will really pile on that meat!
