Veal Parmesan

Yes, this is Paleo! Although looking at this dish you may question it’s true Paleoness, as long as you allow yourself cheese, this is definitely fine to eat! The “breading” is made with almond flour and Italian seasoning and I fried it in avocado oil. It’s somewhat unbelievable to have something that tastes so delicious be so good for you. Veal is one of my favorite cuts of meat but this is actually the first time that I have prepared it myself. I was a little intimidated at first but it turns out that it is extremely easy to make! I double-breaded it and fried it and then topped it with tomato sauce, cheese and scallions and then popped it in the oven until the cheese was nice and melty. I served it with a crisp salad dressed with balsamic vinaigrette which really helped to cut into the richness of the veal. I think next time I will add a little spice with some red pepper flakes in the breading to add a bit more oomph to the dish, although it was pretty perfect just the way it was.
