After a long day in the sun, we came home and forgot that we hadn’t taken anything out for dinner. It was very hard to resist the urge to order out but we got through it, which is great because the only delivery around here is pizza and I’m so starving I could eat five slices! We decided instead to make egg salad sandwiches. Well, sandwich for vegetable hater and lettuce cups for me. I love boston lettuce because it can be utilized as vessels for almost anything! It is nice and soft and has a very mild flavor which allows the ingredients that you fill it with to really stand out. Mmmmm bacon… Egg salad just tastes so much better with it! Another one of my secrets is to use smoked paprika to season, it adds a great flavor to the mix.
