Portobello Pizza

Oh. My. Gosh. This just may be one of my favourite paleofied meals so far! Today I am working from home, so that means that I get to get a little more creative for my lunch time meal. Usually I bring leftovers from the night before but since we ordered out last night (I kept it Paleo, promise!) there was nothing ready made for me to eat. I was looking in the fridge and I noticed some beautiful looking portobello mushrooms. Hmm, I would love to grill those but what could I put on top? I have done portobello burgers before and they were delicious, but I don’t have any ground beef thawed out. Then it came to me; portobello pizza!!! It was relatively simple to make, I used the same seasonings that would be on a pizza dough and I spread that over the mushroom (after cleaning and de-gilling of course!) Then I grilled the mushroom on both sides and added the toppings that I was craving. After that, I just grilled it for a few more minutes to allow the cheese to melt and the onions to get a little tender and in about 5 minutes it was ready!

I didn’t expect the epic deliciousness that was about to follow. The mushroom was tender and meaty with a basil and garlic flavor and of course the pizza toppings tickled my taste buds. If you close your eyes while eating this, you can alllllmost feel like you are eating a real pizza. Although this one is much more satisfying because you know it is better for you! And if you are a mushroom fan, you may even feel that this tastes better than a traditional pizza! I’ll let you decide… 😁
