Green Bean Salad with Bacon and Toasted Almonds

I am always thinking of ways to try to get Vegetable Hater to enjoy some nutritious sides other than salad or corn. I think I may have found the secret with this dish… add bacon! It also helps that I dressed it with his favourite homemade salad dressing and added some nutty crunch with toasted almonds. This dish is a winner! He loved it and he knew I was surprised because he said “this is going to make it on your blog, isn’t it?”

Well of course it will make it on the blog! I now have another vegetable dish to add into my repertoire which the both of us can enjoy, this doesn’t happen often! Another great aspect of these beans is that they are very simple to make and do not take a lot of time. I blanched the beans and served the salad cold but I am sure that it would taste equally delicious as a hot dish in the fall or winter.
