So, I have mentioned these fries in multiple posts because they are the perfect side to almost every meal! It took a while to master this recipe because a lot of things can go wrong. The worst of all being a soggy fry. NO ONE likes a soggy fry… especially with sweet potato fries, it just isn’t right. So the trick to a nice crisp fry without actually frying is… drum roll please… EGG WHITES! That’s right! I coat these babies in an egg white and spice mixture and then bake them and they get a fantastic texture. Also, make sure not to forget to oil the pan… ya… did that a couple times and it didn’t turn out too well.
